Fatayer Jenbeh – Jaddahs Own Cheese Turnover

1lb Feta cheese, crumbled

4 tbsp (heaping) grated Parmesan /cheese

2 eggs

Pepper

½ lb filo or strudel dough

Melted butter

Mix cheeses, eggs and pepper. Stack several sheets filo, brushing each sheet with butter. Cut sheets in 4- inches squares. Spread half of 1 side of each square with cheese filling; fold unspread half over filling. Press edges firmly together; brush with butter. Place on baking sheet. Bake at 375 degrees for 20 to 30 minutes or until browned. Serve hot.

Yield: 8 servings
